‘Kioke Jikomi’ is sake that has been brewed in untreated wooden tanks rather than the modern stainless steel tanks, giving a hint of delicate sweet wood fragrance as well as a delicate cedar flavour. The rice type used in this Sake is called ‘Tamazakae’ which is an ancient strain of rice that originated in Shiga prefecture. It has an aroma of delicate white flowers, pineapple and pears. The palate isrich and weighty with a hint of nashi pear and a mineral backbone with fine acidity. Uehara Shuzō make only one tank a year of this exceptional Sake and we receive a small allocation ofit each year.

STORAGE: Store Sake in a cool dark place, trying to avoid direct sunlight.
HANDLING: Once opened the Uehara 'Kioke Jikomi' will last well for at least 3 - 5 weeks, ideally in a refrigerator.
