Scarlet Bitter 'Ethical Amaro'
In May 2022, the production team from Ethical Spirits Co., Ltd. visited Iseya Shuzo and actually participated in the farm work of planting and harvesting. During the visit, various opinions were exchanged, and the discussion of "Is there any way to utilize the herbs used after production?" was the trigger, and they decided to use herbs that were originally intended to be spread in the fields to return them to the soil to produce raw liquor.
In other words, they decided to produce a recycled amaro. This led to the current project, which makes use of the strengths of both companies.
The raw liquor made from recycled herbs, which were originally meant to be returned to the soil, naturally has more depth than a vodka made from a simple vodka, and the newly created amaro is really fun and has a completely new flavor. The raw liquor is aged for a year and a half in reactivated barrels at Kuroki Honten Co., Ltd. in Miyazaki Prefecture, using chestnut and cherry wood for the barrels.
The taste is gentle yet deep, with a Japanese nuance like sakura mochi, and a hint of the old bottle. The aftertaste is characterized by the fact that it brings out the unique flavor of ethical spirits. Ethical Amaro, which brings out the best in gin and various spirits, is delicious straight, but we recommend trying it with a little more alcohol to open up the various botanical elements.

Iseya Distillery
Located in Lake Sagami Kanagawa, Iseya Distillery was founded in 2021 by Tatsuya Motonaga. The distillery is housed in a repurposed 100 year old traditional house, where each batch of Scarlet is handmade and hand bottled. A majority of the ingredients used in the production of Scarlet are sourced locally including a nearby field that is being used to grow botanicals specifically by Motonaga-san.
