Scarlet Bitter 'Fernet Amaro'
Fernet, a famously bitter style of Italian digestivo, is one of Scarlet founder Tatsuya Motonaga’s most beloved amaro categories. With roughly half of its thirty botanicals grown onsite at Iseya Distillery’s Kanagawa farm, this Fernet is a true labor of love. Because the use of gentian is restricted in Japan, botanicals such as chicory and aloe are used to provide the expected bracing bitterness, offering a fresh interpretation of a classic category.
- Made with over 30 botanicals featuring palo santo, chicory, raspberry flower, elderflower, aloe, galangal, sorrel, cinnamon, mint, rooibos, and cinnamon
- Botanicals are macerated in a combination of aged and unaged neutral sugarcane spirit
- Aged spirit matured for 1 year in American oak casks previously used to age Chichibu whisky
- Sweetened using kokuto (Okinawan raw cane sugar) and Japanese beet sugar
- Rested in stainless steel tanks for 10 days before bottling

Iseya Distillery
Located in Lake Sagami Kanagawa, Iseya Distillery was founded in 2021 by Tatsuya Motonaga. The distillery is housed in a repurposed 100 year old traditional house, where each batch of Scarlet is handmade and hand bottled. A majority of the ingredients used in the production of Scarlet are sourced locally including a nearby field that is being used to grow botanicals specifically by Motonaga-san.
