This sake is named after Rumiko Moriki, who is the Toji [Master Brewer] and Kuramoto [Brewery Owner] along with her husband Hideki Moriki. A pure rice sake made without charcoal filtration, pasteurisation or dilution. The manga graphic on the label of this sake is a very famous drawing of Rumiko when she first started brewing sake, as she was one of the very first female Toji at the time, around 30 years ago. Rumiko no Sake ‘Kimoto’ is made with Yamada Nishiki and Hattan Nishiki rice types. Brewed using the traditional kimoto starter method, this sake shows wonderful complexity and a balanced savoury palate.
